So I have arrive in the US and married my fiance a week ago. It's going to be another 3 weeks until we can even apply for a marriage certificate enabling us to then apply for our AOS and EAD. My question is: am I eligible to work right now or do I need to wait for my EAD?

By law, USCIS must provide your work permit within 90 days of application (assuming the application is in order). Usually they wait until the 80th day or so....lol

Well, it isn't 'by law' - it's an internal policy rule to attempt to have all cards to applicants within 90 days. You have a right to inquire about this after 90 days.
