Tell your fiancee/wife to make yall some banh chung chien (fried). Frying makes everything better! LOL. It taste pretty good because of the crispy texture from the rice and the beans on the inside compliments it well with the pork. But I understand that banh chung might taste boring when it's right out of the banana leaf. Frying it just takes it to another level.

Make sure not to buy any new clothes for at least a few months after Tet. Evidently this is considered bad luck. Thuy bought a new towel (not sure why this was bad) when she was a child and a plague of locust descended on Tien Giang. The entire season's rice harvest was destroyed.

I will ask about it. Her Uncle has already been teaching me how to cook certain things. I can now make my most favorite VN meal which is Pho'. I learned to make VN spring rolls but everyone can still tell which ones I rolled. Rice cookers make it easy to make the rice. Oyster sauce can make chicken so tasty that it is like heaven on earth. Luckily I live near the water where the boats bring in the seafood and can cook many things. I have told her I plan on doing much cooking for us and she just laughs.

I forgot the name of the fruit there but I remember it has a horrid smell. It was a delicacy there but could not really get used to the sewage smell. Another thing I didn't care for much was a nut soup. It had peanuts, walnuts and maybe 5-6 different nuts in it. I liked it at first but after halfway through I was tired of it. If it was just a few bites it was good.

Do you live in the Galveston area? If so, I am from Houston Too. My parents live on the South East Side of town near Beltway 8 and I-45 south. Everyone seems to love springs rolls cause their easy to make and are pretty healthy. Some Vietnamese people can not live without having their rice and Vietnamese food once and a while. Like me (Texas Born and Raised), I still gotta have my Vietnamese dishes and rice. I'm sure your wife will like your cooking and I'm pretty sure you like her cooking too (what Vietnamese Women do best among other things). Lots of Vietnamese people love the taste of Southern Texas cooking especially crawfish and cajun! Man I miss that stuff. Your fiancee will love Houston. We have such a big Vietnamese population there she will feel right at home.

The Fruit with the horrid smell you're talking about is probably sau rieng (Durian). That stuff does smell really bad and if you bring it inside your home with Air conditioning the smell will stay there for a long time. Some Hotels don't even allow it in their rooms. You can get sau rieng in Houston at the Vietnamese stores like hong kong food market where they sell it frozen or sometimes even in it's shell, but I'm sure when your fiancee comes you won't be eating alot of that in your home. lol

Yes Dai I do live north of Galveston in League City. I am up the road from where you are talking about. That is the Scarsdale area and I go to the Hong Kong market to get my Vinacafe often. Many VN live there and I know a few that I visit. I was also was born and raised in that area but closer to where 610 and 45 come together. It was much nicer back then. That was the name of the fruit Durian. She can eat it if she wants but maybe No kissing for a few days afterwards. I don't plan on buying any though. I did see Jack fruit there and shocked at the price. It was so cheap in VN and I ate it every day. I live near the Boardwalk and also where the boats come in so I get much fresh seafodd which is my specialty to cook and eat.

She will be fine and many VN to talk to. Trang also has cousins that live nearby and her Aunt and Uncle do too. In fact she will be taking over her Aunts hair cutting place that she owns as she wants to retire. She will like my cooking I am sure I am not too bad cook and know many dishes and I also lived in New Orleans also and can cook Cajun well. And of course I know any and all southern cooking and Bar Be cue. Never met a piece of meat that could not be grilled. We will be fine I am sure on the food front even though she laughed when I said I will be cooking sometimes. I think she thinks guys can't cook.
