Beef Enchiladas II In these simple, quick beef enchiladas, ground beef and onion are wrapped in flour tortillas, topped with Cheddar cheese and black olives, then baked. This is also great with leftover chicken, shredded beef or turkey. Serve with a green salad or beans and rice.

  • Prep Time: 25 Minutes
  • Cook Time: 20 Minutes
  • Ready In: 45 Minutes
  • Yields: 10 servings
INGREDIENTS
  • 1 pound lean ground beef
  • 1 small onion, chopped
  • 1 (1.5 ounce) package dry enchilada sauce mix
  • 10 (10 inch) flour tortillas
  • 2 cups shredded Cheddar cheese
  • 1 (2.25 ounce) can sliced black olives, drained
DIRECTIONS
  1. Preheat oven to 350 degrees F (175 degrees C). In a medium skillet over medium high heat, cook the ground beef and onion until beef is evenly browned and onion is tender.
  2. Prepare the enchilada sauce according to package directions. Pour 1/4 cup of the sauce into the bottom of a 9x13 inch baking dish.
  3. On each flour tortilla, place an equal portion of the ground beef mixture and about 1 ounce of Cheddar cheese, reserving at least 1/2 cup of cheese. Then tightly roll the tortillas and place seam side down in the baking dish.
  4. Pour the remaining sauce over the top of the enchiladas and sprinkle with the remaining cheese and olives.
  5. Bake in a preheated oven for 20 minutes, or until the sauce is bubbly and cheese is thoroughly melted.

Ells, im always thinking of ways that me and him can get ahead, because the area where i live isnt a heavily populated JA area. I dont think it is too expensive to rent space and waht i actually figured is each time i got to JA, i purchase items, but maybe if i started purchasing them in large enough quantities, i could have enough to try a start up at the Market and see if its a worthwhile investment. Shoot, every time i go i buy a couple of bottles of appleton but im not a huge drinker so its sitting in my cabinet or i buy a few packets of seasonings here and there, well eventually all that will add up... anyone those are just the wheels in my brain turning, i want to be able to combat the depression, and boredom from setting in when he gets here by having a plan in place.

Today is such a blah day, i was just reading an article in Oprah mag, ( i was really bored) about these two guys who opened a bakery shop and how they both left good jobs to pursue there passion and i wish with all my heart that i was in a financial position to do what i really enjoy, i always say when i reach retirement age that i wanted to open a coffee shop/bookstore where i sold pastry, cause i love to cook and coffee, maybe some local art and all the current magazines. I would have music playing in the background maybe a little chris botti...( sigh)

anyhoo, my mind is always working and i was thinking one thing me and the SO could do if he was game when he gets here and as a way to have extra income and keep him from being bored is to rent space at my local farmers market which runs three days a week and offer up carribbean items. there is a small JA population here, but also a niche i think that could be filled. IF we were able to offer up items like certain seasonings, spices, et cetera and maybe some prepared items, it would be beneficial. Of course i dont think we would be rich behind it but at least it would give us something to do until he could find employment. Ok im done rambling, it was kinda quiet in here so figured i would just chat.

Portland, well if you dont get yours i will mail you one of mine, i can suck up the cost of buying one if need be. I figure as long as the TV in the living room has one, i dont care about my or my kids TV, they can watch movies if need be...LOL

Honey, that's so sweet of you, right now we are using foil paper as antenna which is working so far. I applied for the boxes in my name before I left NY not sure if they every mailed it to me I called my landlord and asked him if he could check my box before he rents out the place so hopefully they send it to the old address. But I wasn't sure so that's why I applied for 1 in my SO names, we will wait another 2weeks and see what happen.

Lovesponge, I'm trying to get all that done too and just last night going through the boards I read that if you use the most current version of the I-134 it does NOT have to be notarized any longer. Let me search and see if I can find that info to link here...be back!

Here's a topic that explains it and someone confirmed it with USCIS. Seems on the forms link it is still not updated but on the newest form the instructions state it's not necessary AND there is now no place for a notary to sign or whatever. YAY! One less hassle!

I know how it is though...when the weather isn't so good all I want to do is be inside cooking and trying stuff out. Like I always say (with my pudgy self), "It's hard work maintaining this figure!"

sounds like a good idea Honey. There are places in the states that sell JA items wholesale

Marie, we dont have a carribbean market in my town, only an african guy who has a store called the afro carribbean market, im scared of his stuff though, i bought some curry from him and it looks all old, the jar was all beat up, i think he must be wholesale ing or bringing stuff from New York, to sell. He had alot of products that are more prevalent in the african community, my friend from ghana loves it, but when i was looking for specifics i couldnt really find what i need, and then i was always asking him did he have patties and he said no, so i quit asking, but i checked it is only $15 a day to rent space or $50 a month, to rent space so i figured we might could make a go of it, i also asked him if he was interested in barber school. i know the economic situation is not a good one hence my 90 mile commute daily and so im trying to be proactive.
