Applying for a K1 Visa and then visiting the US

Timeline

I am currently in the US on a 6 month Tourist Visa. My visa expires in February. We plan on getting engaged and then I plan to return to the UK. We think our best option is a K1 visa. However, now I have spent 4 months with my boyfriend, its going to be very difficult waiting for the K1 visa (which seems to take at least 7 months). Can anyone let me know any recent examples where they have travelled to the US on the visa waiver programme for between two week and two months whilst their K1 visa is in process?

I really appreciate your help.
