Can anyone tell me what the date is referring to on the NOA2 that says valid from? Does it mean just the NOA2? It says may but that's like in 4 months.

The approval notice (NOA2/I-797) is valid for 4 months. A consulate/embassy can (and routinely does) extend this period if need be. Not something to be terribly concerned about.
