I just wanted to confirm that once we receive the NOA2 that I should send my fiance the original documentary proof i was there with him and of our ongoing relationship, like all my receipts and boarding passes, instead of just the photocopies which are in the duplicate packet I made to send him (so need to send both?)?

I sent Claudeth the whole packet I sent to the USCIS with all the original documents.

Yous should send the whole I-129 packet. Then you need evidence of the relationship between the approval and interview. Plus the notarized 1-134 and evidence to go with it.
