Hi all,

I'm in the process of making a cookbook for my sister who sucks at cooking (seriously). She is doing her best, she's newly married and well lost! I have my collection of tried and true recipes but am looking for more. EASY!! Main dishes, side dishes, breakfasts, lunches anything is on the table!!!

If they like pasta here are two of my recipes.

Linguini

1/2 box of linguini noodles

1 tomato

1 cucumber

1 green onion

1 bottle of zesty Italian dressing

Salt

Pepper

Garlic powered

Boil linguini noodles until tender. Drain the water and rinse with cold water to cool the noodles.

Chop tomatoes, cucumber and green onions into small pieces & place in a bowl with noodles. Add the bottle of dressing, salt, pepper and garlic powder to taste.

This can be used as a side dish or if you sauté some shrimp or chicken it can become a main dish.

Pasta Salad

1/2 box macaroni noodles

1/2 pack sharp cheddar cheese - finely shredded

1/2 jar green olives - slices - drained

1/8 onion - minced (about 2 tbls)

1 - 2 cups of mayo

Salt

Pepper

Boil noodles until tender, drain, rinse and cool with cold water.

Chop onion until minced. Add noodles, cheese, mayo, onion and olives together. Add more mayo if it seems to dry.

Salt and pepper to taste (remember to taste it before adding salt - the olives will add saltiness to the dish)

If they like fish Salmon is very easy to prepare.

My "recipe" for salmon is.

Salmon

1 - 2 Salmon pieces per person

Lemon pepper seasoning

Salt

Pepper

Olive oil

If salmon pieces have the skin sill on - leave skin and season both sides with LP, salt and pepper - its best to taste a little of your lemon pepper seasoning first before adding salt. Sometimes the seasoning can be quite salty by itself.

Heat grill or frying pan add olive oil enough to coat the bottom. If you are cooking on an outside grill then put the oil directly on the salmon.

Place on grill or in pan flesh side down. When fish released from the grill / pan it is ready to turn. (Never force the fish to turn or any mean to turn) You should only need to turn the fish once. (Once cooked the skin can easily be removed).

Fabulous!! Those sound like things they would love!

So background might help - they have a son (2 yrs old) they like pasta, fish, chicken, pork (not Muslims) etc. Her husband is in the Army so he's not always home but when he is he eats LOTS!!! Thanks for your help!

Campbell's Kitchen recipes are uber easy - http://campbellkitchen.com/ - and there are a ton of them. I can't remember what I've made from there, since it's been awhile since I've used it, but I think just about everything was good

Also, just about every recipe I've made from the Bisquick site has been uber tasty as well - http://www.bettycrocker.com/recipes/main-i...t/bisquick-mix/ - I've made a lot of the Impossibly Easy Pie recipes (the Salmon-Asparagus one is my fav), and the stew recipes are delicious.

One thing you should write a little warning about to go along with these recipes - always always always watch the sodium content, and don't eat too many of these recipes that use processed foods per week. We ate a lot of these in the early years of our marriage, along with pasta-roni type stuff, and my blood pressure went through the roof. Another good tip is to always balance the meal with a large helping of vegetables. We would often eat only pasta and meat, and again, my health suffered terribly. It's so easy to make a tasty veggie side dish. Get a packet of mixed vegetables from the freezer section. Dump it into a frying pan, no oil or butter or anything, and stir fry until it's thawed. Add a drizzle of olive oil and a few shakes of Mrs. Dash (there are a ton of flavors, collect them all!), and wa'la, tasty veggies.
