It's illegal for ANYONE to "work under the table" if they don't report taxable earned income. Illegal for the employer also.

Yes, this is a great way of demonstrating that you will be a "Lawful Permanent Resident" after getting green-card.

Some sarcasm there.

What I mean is if being paid "off the record" this considered to be breaking the law, it is a way to avoid paying income tax. You will be applying to adjust status to LPR, a requirement of an LPR is to not do things that are considered Un-Lawful, IE working "off the record."

I would wait for EAD or Green-card before taking a job, and work above board paying income tax.

LPR is Lawful Permanent Resident Card or Green card holder.I would advise you to be patient and wait till you get your work permit to avoid being in trouble.

LPR or green card, once you have it you are legally allowed to work. You better be patient and don't take risk.

What you are planning is risky.

And why would you want to work in a company that keeps you "off the record" (using your own term). If something happened to you, you are not covered. Think about it.

Don't do anything illegal that you might regret later. At least wait for your EAD so you can work while waiting for your green card.
