I made this for a Thanksgiving get together and it was quite a hit:

corn casserole

I also have a recipe for an excellent cheeseball that I make every year at holiday time but I have the recipe in my head and I'll have to think about amounts, let me know if you want me to write it out :)

i did the corn casserole at Thanksgiving dinner at my daughters house, it makes a good fairly large dish, also add some chopped green chilies (dont remember if i read in the ingredients or not) :thumbs:

Weed Brownies:

6 ounces of unsweetened chocolate

6 ounces of Medical Marijuana

4 eggs

1 tablespoonful of vanilla

1/2 teaspoon of salt

2 1/2 cups of honey

4 cups of flour

3 tablespoons of Jack Daniels (optional)

Greased 9x12 baking dish or pan

Melt chocolate in a double-boiler saucepan, add the weed and honey, mix well, add eggs and mix again, add salt and vanilla, mix again, add flour, mix again. Pour into pan. Bake 35 minutes at 375 degrees. Remove from oven. Allow 1 hour to cool and set before cutting. Cut into 2 inch squares and place in gallon sized ziploc bag for storage or freezing.

For the perfect finish to a special dinner or a special evening try these gourmet honey weed brownies with a rich, complex flavour and velvety texture guaranteed to please the most discerning. For variety with the weed brownies try adding 3 tablespoons of Jack Daniels, wild turkey, crown royal, or cognac to enrich the flavour; or 1 1/2 cups of cherry halves and 2 tablespoons of brandy; or drops of mint extract in batter to taste; or 2 tablespoons of instant coffee crystals dissolved in 1 tablespoonful of hot water.

Serve with rich coffee, espresso, port or cabernet.

I love the Christmas crackers idea, but shopping is so limited here on the Big Island. We have 2 walmarts and a K mart that's it. And I haven't seen Christmas crackers at either. :crying:

As for the weed brownies, now all those ingredients are very easily accessible on this island.

Thanks for the ideas guys! I'm liking a casserole idea.

I love the Christmas crackers idea, but shopping is so limited here on the Big Island. We have 2 walmarts and a K mart that's it. And I haven't seen Christmas crackers at either. :crying:

As for the weed brownies, now all those ingredients are very easily accessible on this island.

Our Wal-Mart store is selling Sara Lee mince meat, pumpkin, and apple pies for $2.25 each, just toss in the over for 60 minutes, not really bad, but missing Mrs. Smith deep dish apple pies, our stores aren't carrying them anymore. Learned they are still in business and very close to the USCIS field office in Bloomington, WI. They use fresh unbaked applies, and seasoned just right, nothing like mom's apply pie, but mom is gone, Mrs. Smith does a great job for a frozen pie.

Sara Lee mince meat pie was exceptionally good, stocked my freezer up and you don't have to kill a mince to get it's meat.

I agree with Reba that it should be something that could be served at this meal or on another day. Brining something that completes the meal suggests that the meal would be incomplete without your contribution.

How about marzipan stuffed dates? They hold (covered with a little Saran Wrap) for days.

Marzipan-Stuffed Dates with Almonds

Servings: 36 pieces

18 whole unblanched almonds

1 pkg (8 oz/200 g) marzipan

36 dates

1/4 cup (50 mL) granulated sugar (optional)

Preparation:

Spread almonds on baking sheet; toast in 350°F (180°C) oven, stirring once, until fragrant and golden, about 10 minutes. Let cool.

Meanwhile, divide marzipan into 36 pieces, about 1 tsp (5 mL) each. Roll each into oval. Cut each date down centre to expose pit; open gently and remove pit. Press marzipan oval into date.

Cut almonds in half and press 1 half into centre of each marzipan oval.

In shallow dish, roll each date in sugar (if using). Refrigerate for 1 hour. (Make-ahead: Refrigerate in airtight container for up to 2 weeks.)

this is more of an appetizer thing but they are soo yummy.. I usually make them when we got to the sister-in-law's house for Christmas..

take a flour tortilla and spread it with cream cheese (i like to use the flavoured cream cheese, the savory flavours of course).. then sprinkle some chopped up deli meat, like ham on it and then some chopped up bell pepper and grated cheese and then roll them up and cut into bite size pieces..

My husband's cousin made that at Thanksgiving and he absolutely loved it.

If it's meant to be potluck, it sounds as though she is in the need of non-starchy sides. A good salad:

Baby mixed greens

Red onion, thinly sliced

Gorgonzola cheese (crumbled)

Pear, cubed

Candied pecans (candied walnuts okay, too.)

Salt and pepper to taste.

Finger foods like nice olives or a cheese platter might be good, too.
