Confused about AOS package assembly

1). When we file, we are sending each package within an envelope marked: Form I-130 to the filing address, then form I-485 to that filing address. When we put all of these envelopes inside one large envelope to send to the Chicago lockbox, do we need separate postage within the large envelope for the different packages?

Most folks will separate each form/package with a cover letter and perhaps using binder-clips - then all goes in one envelope to the Chicago Lockbox address - not sure you need to use separate envelopes as they'll be opened/separated once received (but it can't hurt).

Also, if I file for a I-131 concurrently with the I-485 I see there is no additional fee. Can I leave around the date I specify in the I-131 form or does it have to be that date?

You can use it any date I believe, it's just an indication for them.

Don't make their life too difficult - they have their own filing system once it gets to them and everything will be separated anyway, it all goes to the Chicago Lockbox - they take of it from there, no need for postage within the package.
