Hi all,

I'm back. I loved Senegal and had a wonderful time, except for leaving. Unfortunately I came back to being laid off from my job, my computer crashed and my internet turned off, so it's been a bit difficult to get here and post. I am using my mom's very old laptap (I think it was the first one ever made LOL) and her very slow dial-up internet and she only pays for 15 hours a month so I am quite limited. So, I just wanted to let you know I'm back and the trip was fabulous, even though it got off to a rocky start. Hopefully by the end of December I will be able to file the K-3 visa application. I did get a new job, PRAISE THE LORD and it's a job I had 2 years ago so it won't take much time to get up to speed, will mainly be trying to figure out where the person I trained has moved things too. The owners are awesome people and are starting me out at the same salary I left with and benefits including the fact that I will have 2 weeks paid vacation on the books when I start next week! I had hoped to take my kids to Senegal in April during spring break but the owners always travel during that time so it looks like we will have to wait until June when they get out of school. Hopefully by that time we will be half way through the visa journey (I know, wishful thinking).

When I get my computer fixed and internet turned back on I'll post some pics.

I did quite well thank you!! I thought for sure I would have gained 20 pounds with as much as I ate but only gained about 5. I ate a lot of rice and bananas (never would have thought those two things went together on the same plate but it was quite good) and spaghetti. I did have bush pig one night too. I made dinner one night, ended up being like a potato cabbage stew. I asked for Irish potatoes, carrots, onions, some other veggies and maggi. They brought me cabbage as the "other veggies". It turned out quite well considering I have never made it before and had no cookbook! We had a little leftover meat so I sprinkled that on top. Everyone like it, except for the peels on the potatoes - they don't eat those LOL! Oh I also ate fufu (sp) every night the last week I was there. The laughed hysterically at me when I ate it though!! I continually burned my fingers as I grabbed it out of the pot and then I would "chew" it instead of swallowing it. At least everyone was in a good mood when they went to bed LOL! The two guys that cooked most of the meals for us were very nice and rarely added pepper to the meals because they had been told I didn't handle it all too well. Although in the sauce for the fufu they did add it because at first I wasn't eating with them. I never took a whole lot of the sauce so I didn't burn my insides - too much. Oh I made breakfast twice too, we had pancakes (I brought pancake mix and imitation maple for syrup). The first day they ended up being deep fat fried in groundnut oil because one of the guys told me that was how I HAD to do it. The second time I got up a bit earlier before he arrived and just barely oiled the pan before I cooked each pancake and they turned out very good :) actually they were good his way too, just loaded with fat!

Very good! How was your wedding?

Wedding was good. It was just a civil ceremony at the courthouse type place. Then we went to two celebrations.
