hmmm upside down? i dont know about that........i just stuff mines add natural chicken broth to the pan put butter all over the top of it then put tin foil on the pan to over it put it in the over at about midnight at 325degrees wake up at about four poor fluid from the pan over the turkey reseal the tin foil let it cook until the legs are almost falling off take off the ten foil and brown it white meat is tender so is the dark meat..................

I cooked a whole turkey for the first time on Canadian Thanksgiving this year and it turned out amazing! I brined the turkey the night before ( http://allrecipes.com/Recipe/Turkey-Brine/Detail.aspx - not the exact recipe I used, but similar), cooked it breast side down for the first few hours covered in foil, then flipped it over and cooked it for another hour or so. I have never tasted such a moist turkey! My father was even in awe and trust me, it's very hard to get a compliment out of him! :lol:

It was a little more work, but I will be doing the same thing next year.

how do u keep the dressing from becoming overly saturated with the turkey juice cooking it that way?

I cooked the dressing seperately. Since the brine is basically salt water, I was worried about the dressing being too salty as well as just a soggy mess.

I cook my turkey upside down so the juices stay inside. I turn it over during the last hour and then cook it some more in foil. I rub it with olive oil, sage, fennel and rosemary. Then I bast it with turkey juices every hour or so. Then I pour a glass of white wine and keep basting every 30 minutes. During last half an hour I rub it with little honey for a beautiful glaze. I serve it decorated with rosemary sprigs, fresh apples and pomegranade seeds.

Try this recipe

Great!!!!!!! Enjoy . .

Ingredients:

1 whole Turkey (weight is dependant on how many servings are required)

1 large lemon, cut into halves

sprig of rosemary

salt and pepper to taste

butter or olive oil, whichever you prefer

Heat oven to 350 degrees

Rub butter or oil over the skin of the Turkey until it is completely coated .

Take a knife and gently separate the skin from the breast meat.

Slide lemon halves under the skin with the peel side up. This way the juice from the lemon will coat the breast.

Season skin of the Turkey to your preference, and place sprig of rosemary into it.

Cover and place in oven for 30-45 minutes.

Remove cover and continue to roast until juices run clear, basting every 15-20 minutes depending on the size of the bird.

If you've followed these steps correctly, your Turkey should look like the one in the attached photo.

I always cooked the turkey upside down and covered it with foil. About the last hour I would turn it over and remove the foil and spread butter all over it. Num Num, nice and chrispy and juicy!

I miss my Thanksgiving Dinner but Claudeth thinks it is too much work for just the two of us. It looks like it will be a Claim Jumper Thanksgiving for us this year :D

if you don't want to do a whole turkey, you can always do up a couple of teukey breasts and or turkey legs... that is what I was planning to do before I knew if we were going to hubby's sister's or not...

It has been rumored that cooking a turkey upside-down, then flipping it over in the last hour (for crispness and browning) will keep the bird moist throughout. Further, you are supposed to raise the heat substantially in that last hour.

I have never tested that theory, but it does sound plausible.

How about you?

We plan to try a modification of this concept tommorow (50/50 on each side). Results forthcoming...
