Pile up the coals pyramid shape before you spray lighter fluid on them. Light the heap near the bottom and on the side where the/a breeze is coming from.

I'm speaking from 1 year of TX BBQ experience ;)

... get some hickory wood chips and soak them in water for about half an hour. If you have a coal grill, you can put the wood chips right in the coals. If you have a gas grill, put the wood chips in some heavy duty aluminum foil and just set that on the grill next to the food.

We like to grill chicken a lot. One good tip for boneless chicken breasts is that if you can, pound the meat a bit so that it is an even thickness throughout (or as even as possible). We like to marinate our chicken overnight with this recipe, and the chicken tastes scrumptious. :yes:

Lemon Chicken marinade (adjust amounts accordingly for more or less chicken):

the juice of 4-5 lemons

2-5 cloves of garlic, chopped really fine or smushed through a garlic press

a heathy shake of herbs of your choice (we like terragon, or oregano, or rosemary)

a big dollop of dijon mustard

a big dollop of olive oil

Whisk altogether and pour over chicken in a glass container. I tend to flip the chicken a couple of times, jsut to make sure all the surfaces of the chicken get basted. I marinate overnight. When getting ready to cook the chicken, I take it out of the container and let most of the marinade drip off, to minimize mess on the grill. :)

this is also good baked in the oven. :)

OK I've got a nice fire going, the coal is turning gray... I made a pouch of alumin(i)um foil with wood chips in it (don't forget to punch holes in it), that goes on the grill and when it starts smoking I'll throw some mega-burgers on B)
