From reading the forums, it looks like people here know something I don't!

How are people somehow aware of when documents and payments are "accepted", or bills are generated at the NVC before they actually HAVE confirmation through the mail? Is there a updated online account you can log into? Or a automated thing through their call centre? Or are you guys simply calling the NVC operators and asking?

It's all in the Wiki under Loto's Guides or James' shortcuts for NVC processing. Once you know they have your case you can call their IVR and it will tell that a form or a bill has been generated. If not, then you can talk to a live person and ask. Also, if you choose to pay both bills online, you should be able to print out the coversheets from their website the following day or the day after that and not have to wait for them to mail you anything. Fast and convenient.

09/27/07 - Interview, visa granted

10/02/07 - POE

11/16/07 - Received green card and Welcome to America letter in the mail

Removing Conditions

07/06/09 - I-751 sent to CSC

08/14/09 - Biometrics

09/27/09 - Approved

10/01/09 - Received 10 year green card

U.S. Citizenship

03/30/11 - N-400 sent via Priority Mail w/ delivery confirmation

05/12/11 - Biometrics

07/20/11 - Interview - passed

07/20/11 - Oath ceremony - same day as interview
