I have loads of eggplant and can't decide if I should make lots of baba ghanoush or eggplant parmesan...whatever it is I'll have to freeze some because no one is going to be able to eat all of this damn eggplant

It's in the oven roasting for the baba. I have loads of veggies I have to do stuff with. I've already fire roasted 10 bell peppers. I have tons of wild mushrooms, 10 zucchini, a few yellow squash, lots of butternut squash, about 50 tomatoes, lots of potatoes and onions. I'm going to be busy tonight.

I feel like this and this right now.. nothing happened or anything.. it is just one of those days..

I think partially it is because i am tired and hungry and don't feel like cooking anything...

I'm in a really good mood tonight. I'm busy doing lots of cooking and directing the packing of some stuff we don't have room for. I keep telling Neil to just throw stuff away.
