I roasted some yesterday. Spread olive oil on a baking sheet. Add the seeds and make sure they are covered in oil. Sprinkle with salt. I prefer freshly ground salt but any salt will do. Roast in oven at about 350 to 400 degrees for about 10 minutes. Check on them frequently cuz they can burn easily. Yum.

Do you have to let them sit and dry out a bit before roasting? Or just wash them and pat them dry?

We would wash them and pat them dry, then mix with a bit of olive oil and salt (I also like fresh ground salt, gives more of a crunch). Keeping an eye on them and stirring them while baking are key. :)

I used regular oil and did the same thing over the weekend. I do suggest you flip them once to evenly cook.

We would wash them and pat them dry, then mix with a bit of olive oil and salt (I also like fresh ground salt, gives more of a crunch). Keeping an eye on them and stirring them while baking are key. :)

Oh, yeah.....I soaked them in cold water for about 20 minutes beforehand.

mmm roasted pumpkin seeds. Actually, I clean off the pumpkin gunk and then soak them for about 20 minutes in soy sauce instead of water, then just roast them like that. Yum! You can also do a slower oven around 300 for 20 minutes and then turn off the oven and just let them cool in the oven. If they start getting too brown, though, then take them out.

Oh yeah, the soy sauce idea sounds interesting....... hmmm, must try!

And the cooling off period is important -- I dumped a batch in a container too early and they got soggy with the steam. :(

My DH and I tried using salt and a tsp of cinnamon on ours as seasoning before roasting this year (w/ olive oil) .... I thought it sounded gross but they tasted amazing!

2004-09-03 : Met at college in USA and went on first date!

They turned out awesome! I soaked them in soy sauce and water for 20 minutes, patted them dry, tossed them with olive oil, kosher salt and creole seasoning. Roasted at 350 for about 15 minutes and they were perfect.
