it's a custard and then you put sugar on top and burn/melt it with a blowtorch to form a nice thick crust. yum yum yum

Creme caramel rocks!!! Soft curd vanilla bean custard, with a very soft caramel topping (the non-flamed version).....Served with lightly sweetened, freshly whipped heavy cream! Wow!!!!

As an alternative to typical Thanksgiving fare, how about roast leg of lamb with garlic au jus (the remaining juice from cooking the lamb). Of course, you must roast the lamb with celery, carrots and onions (along with cracked black pepper, garlic, rosemary and so forth).

Sounds awesome... I suppose you want to carve something...

With lamb I am more into grapevine-fed grilled lambchops... salt and pepper to season... enough said before I run to the kitchen instead of bed.

Wishing you ten-fold that which you wish upon all others.

Amby,

Thoughts/suggestions on roast leg of lamb? While we are at it, how does one make Baklava? I love that stuff!!!

haha baklava is easy as long as you buy the filo pastry from the frozen section at the grocery. i'm sure someone here probably has a really good recipe for it that is authentic :P

as far as lamb...red wine...lots and lots of red wine. anything else doesn't matter :P

Cook with it, errrr.... drink it while cooking or both? Either way, this sounds like a plan in the making...

Every year:

Turkey (I miss fried turkey!)

green bean casserole

candied mashed sweet potatoes

Daddy's corn bread stuffing

homemade cranberry sauce

pumpkin choc chip scones

pumpkin pie and pecan pie (homemade usually, but some years I cheat)

lots and lots of yeast rolls

sparkling cider

I like Turkey, but I hate it when we have to eat for the whole week..

Hmmm... baklava...

(trying to get my mind off that opera cake. Chocolate overloads my circuits)

I have tried making it with a mixture of honey and sugar water and lemon juice just before baking... not too shabby but could use improvement.

Wishing you ten-fold that which you wish upon all others.
