Ok, stuffing recipe aside, I DO have one turkey tip which has always proven.

Take said bird, rub the cavity with lemon juice and whatever seasonings you usually use. Shove some cut up onions, carrots, celery (even leeks if you've got them) and fresh herbs (parsley, thyme, tarragon) into the cavity.

Tie the legs closed.

Make a pocket between the skin and meat on both breasts. Be careful not to break the skin. Rub some olive oil in the pockets and put more sprigs of the herbs in the pockets.

Rub the bird down with more olive oil and season the skin.

Then, flip the bird on it's breast and roast it that way. The juices from the veggies and from moister parts of the bird will seep into the usually drier breast meat.

This doesn't make a bird that is perfectly brown the way you see it on TV, but who really takes an uncut bird to the table, and especially takes a bird directly from the oven to the table. I love when you see that on TV! LOL

Let bird rest, covered completely with foil, then turn the bird over for carving. Very juicy everytime.

I get most of my recipes from allrecipes.com or the food network. A couple of years ago I made a turkey with canadian bacon and basted it in syrup and it was a total hit. It was a very good recipe I found from the food network, of course. ^_^

Well, I'm not a bacon expert 'cause I eat it maybe once a year (too greasy), but I was just paraphrasing. How many kinds of bacon are there? :huh:
