WHEN MY FIANCE SUBMITS HER I-129 DO I HAVE TO SEND HER MY ORIGINAL PAPERS AND DETAILS OR WILL PHOTOCOPIES BE OK?

Firstly I-129 is for a worker visa, you will be doing an I-129F

Anyway, USCIS wants simple photo copies.

USCIS no longer routinely requires submission of original documents or "certified copies." Instead, ordinary legible photocopies of such documents (including naturalization certificates and alien registration cards) will be acceptable for initial filing and approval of petitions and applications.

You need to be a bit more specific. Who is the USC?

Plus are you talking a I-129F?

i guess i just photocopy everything and send it over to my fiancein the USA?

Only documents needed from intending immigrant for the I-129F are fiancee letter of intent, and a G-325A, and if intending immigrant visited the US citizen in the USA, then evidence of meeting in the USA will be needed from intending immigrant.
