If you do not have an official contract for this, then I wouldn't even worry about mentioning it.

What if they will find out that I'm still employed in Canada...do you think the immigration will do a investigation?

Alright then, if you do not have a written contract, how would they find out? By going to the nursing home to speak to some 80-year-old little lady? I doubt it... As payxibka said, unauthorized work is forgiven anyway. I think you worry too much.

Since I don't have a contract with this employer...I'm confused too what to write in every time a question asked about my current employment. In form G-325A asked about last 5 yrs employment...So I will write down that working in the care home is not my present employment....I'll put the date of which I received my last salary as the end of my employment? If this is the case...if quesiton ask about my current occupation then I'd put "none"?

I quit my job in research after coming here in US. I called my lab supervisor that I'm quiting my job because I'm getting married and decided to stay with my wife....I entered in US on July 19 and I'm still employed in research and 26 of july I told my supervisor that I'm not able to come back to my work....then...I received a record of employment from Service Canada stating there that I quit my job on july 25.

That's good. If you had quit before coming to the Us, it shows that you intended to stay here. Keep the proof that shows that you quit AFTER deciding to get married.

You are not currently employed, so on the G-325A you put "unemployed". For previous jobs, you list the home care job, and the research job. You put your start dates, and your quit dates. Put your quit dates as whatever date it was you notified them that you would not be returning to Canada.

USCIS expects you to NOT currently have a job, because at the moment, you are not currently authorized to have a job. You can't travel back and forth to Canada to continue your jobs there, and you can't work here in the US until you have EAD. This is actually quite common, because anybody who comes to the US and gets married and stays to adjust status has to quit their job back home, there's no way around it.
