07/28/11 USCIS cashed check

07/30/11 Recieved NOA1 and Biometrics letter

08/24/2011 Biometrics

08/25/2011 RFE sent to us for some info we've already sent in

08/30/2011 sent in the rest of info USCIS asked for

09/13/2011 went to congressman's office to sign papers for expedite of work permit, due to financial hardship

09/15/2011 Work permit expedite approved!! He can finally find a job!

09/24/2011 work permit arrives

09/26/2011 Apply for social security number!

09/30/2011 Letter is sent for interview

11/07/2011 INTERVIEW!!!

Its 2012 and still no approval! Still waiting

01/27/2012 Letter sent stating that file was sent on for more review :(

Do any of you have the translation of spices from Arabic to English? I'd love to put that in either the front or the back of the book but I am very limited to the spices I know and hubster wasn't a "cooker" so he jus tknows which colored spice to put in what meal and not the name of them. If you know of any of the Arabic to English spice conversions (or whatever you call them) it would be a help.

I know that:

Zaatar = Thyme

Bobonej = Chamomile (sp)

Maramea = Sage

Thoum = Garlic

Snoober = Pine Nuts

Labneh = Kefar cheese?

Jameed = (i can't explain it..it comes from goats...help appreciated)

Milehh = Salt

I'll ad more as I remember them!

filfil - black pepper

kusbara - cilantro

jos e'teeb - nutmeg

grumful - clove

kurcom - turmeric

bagdonus - parsley

na'a na'a - mint

burghul - bulger wheat

smeed - semolina

Jameed is dry formented yogurt, some people call it whey.

Those are pretty much all the herbs/spices I use in addition to what you liste

VJ Hours - I am available M-F from 10am - 5pm PST. I will occasionaly put in some OT for a fairly good poo slinging thread or a donut.

Remember...Moroccans don't call all those things the same as you both listed.

Also something calling for za'tar doesn't always necessarily mean the herb thyme by itself. Za'atar is many times (in the Middle East) a spice blend that has thyme, sumac, roasted sesame seeds, and salt in it. Moroccans don't use that spice blend, but call wild thyme za'atar.

Also labneh is kefir, not kefar. :)

Here are some basics of Moroccan important food items that are most likely in the recipes you will be including:

cumin= kamoon

cinnamon= karfa

saffron= zafrane

tumeric= moulwwin (they really just call this fake saffron) lol

ginger= skinjbir

paprika= tahmira

sesame seeds= jinjelan

caraway= karwiya

coriander seed= kosbour

ras el hanout= a blend of many spices, each chef having a different recipe. Usually 10 or more spices blended.

onion= bsla

garlic= toum

parsley= madnouss

cilantro=kosbour

mint=nana

hot chili paste= harissa

olives= zitoun

oil= zeit

butter=zbda

salt=milha

pepper=bzar

JP, are the spices u named primarily jordanian terms? If so, then the chart will work.

I'd like 1 copy too and I like title #1 and you can use my user ID. I will also probably have other people wanting copies later. Will they be available to order at a later time too? I've got some recipes to add that have gotten the A+ from hubby. I'll get those together and add them here as soon as I've got a minute.

I love adding the translations of the spices and any other translations would be great!

Why add the Arabic translation near the recipe at all? Too confusing. I think it would look just cute to put a section in the beginning or end to show people what the names are in Arabic for fun, like a glossary then a description of what they are maybe even. But the recipes all in English. *shrug*

About the spices, I was planning to only put them in the front (most likely) just to add some fun educational value to it. I was totally going to leave the recipes with the names they were originally posted with.
