Quick and easy Fish with Orange sauce

When we were first learning to cook without fat, we developed this quick and easy fish sauce.

1 1/2 lbs. fish fillets

2 tbs. frozen orange juice concentrate

1/4 cup dry sherry

1/2 tsp. grated ginger root

1/2 tsp. dry mustard

1 tsp. low sodium soy sauce

Place fish fillets in a shallow baking pan. Combine remaining ingredients and pour over fish.

Cover and refrigerate for 30 minutes. Preheat broiler if necessary. Broil 4 inches from source of

heat until fish is no longer translucent.

VARIATION:

* Add 1 to 2 cloves of garlic, minced or mashed and 1 tsp. Dijon-style mustard, no salt added; omit sherry
