BRAN and FRUIT mini-muffins

Timeline

Vary the fruit in these fiber-rich muffins --- sweet or tart cherries, crushed pineapple, banana.

Just be certain that canned or frozen fruits are prepared without added sugar.

1 cup Nabisco 100% Bran cereal

1/2 cup nonfat (skim) milk

2 tbs. all fruit sweetener

reduced fat egg product equal to 1 egg

1/4 tsp. vanilla

1/2 cup all-purpose flour

1 tsp. baking powder

1/2 cup finely chopped fresh or frozen fruit

Preheat oven to 375 degree. Coat miniature muffin tins with nonstick spray. In a small bowl,

combine bran, milk, sweetener, egg product and vanilla. Set aside for 5 minutes. In a larger bowl,

combine flour and baking powder. Stir bran mix into flour just until blended. Carefully stir in fruit.

Spoon into prepared tins. Bake 12 to 15 minutes, until toothpick inserted in center comes out clean.

Remove to a rack to cool.

note;

per muffin --- 22 calories, 1 g protein, 4.6 g carbo., 0.3 g fat, 1 mg chol., 26 mg sodium

i'm not a big fan of the pickled eggs.. I guess my @ss is not THAT country rofl..
