Take extra blank documents

Go over all submitted documents with you SO

Organize the documents for your SO. I recommend the "kitchen sink approach on CFL: http://candleforlove.com/forums/index.php?showtopic=11500

Go over the 95 questions at CFL: http://candleforlove.com/forums/index.php?showtopic=3131

Can't think of anything else. Good Luck!

buy a plastic folder with about 20 pockets and tabs. organise any documents you have to this point in the pockets and label in english on the back face of tabs. as you go through the docs, let her label the front of tabs, and add post it notes, if necessary.

create a timeline of your relationship history to discuss, and when discussing it, ask her to make similar notes in character, or english if she has good written english. repeat with short outlines of features of your life. start with your family relationships - family tree. cover your education and work history. detail your home and local community with pics. detail your financial condition and prospects with recent documentation. detail your plans for the future. include in your folder in a special pocket.

have her write an outline of her knowledge of you. the same for her in-china preparation to move to america (english lessons, driving lessons, study re your home town area on the net, modern american culture, etc), the same for her expectations of america, including job prospects and educational opportunities. have her acknowledge that she might meet chinese people in america, since they are 1-2% of our population, but not to emphasize an expectation of walking into a chinese community in america and never integrating. include in your folder in a special pocket.

the VO wants to see her as prepared to integrate and function. you do, also. a marriage in which an immigrant partner does not function doesn't have much chance. if she's a keeper, she's worth educating to the point of function, and can grow with occasional guuidance from there. the VO will also be very happy to see your passport paper clipped to the front of the folder when she does interview.
