Good morning everyone. It feels good to come back here and start reading again. I'm sad to say that 4 armed intruders came into our home last month (while we were in the home) and stole everything that was of value to us, including computers and my bag which had all my immigration papers and our ids passports etc. During the whole thing they hurt my son and husband, but alhamdulillah they're healed by now.

Ayesha, I don't know you but I would like to say welcome back and I am so sorry that you had to experience a home invasion. I had my home robbed several years ago and it took months for me to be able to fall asleep without hearing every noise and thinking someone was coming in again. It will get better with time. We will pray for you. (F)

Happy Saturday everyone! It is getting so cold here now, I will wait for the ice to melt off the window on my car before I go to run a few errands this morning. Hubby and I are working on putting our papers together for the interview and doing mock interviews :blush: He gets so nervous, I need to help him find a way to relax...any suggestions???

I just wanted to share the recipe I used b/c it's a little different twist on hummus and doesn't use tahini. I found it on allrecipes.com and I'm giving it a :thumbs:

* 1 (15.5 ounce) can garbanzo beans (chickpeas), drained

* 1/3 cup pitted Spanish Manzanilla olives

* 1 teaspoon minced garlic

* 3 tablespoons olive oil

* 2 tablespoons lemon juice

* 1 1/2 teaspoons chopped fresh basil **I didn't have basil, so I omitted it

* 1 teaspoon cilantro leaves

* salt and pepper to taste **I added no salt b/c I figured the olives would be salty enough, I also added paprika

DIRECTIONS

1. Place garbanzo beans, olives, and garlic into the bowl of a blender or food processor. Pour in olive oil and lemon juice; season with basil, cilantro, salt, and pepper. Cover and puree until smooth. Hummus can be served immediately, or covered, and stored in the refrigerator until ready to use.

ayesha I am so sorry you had to go through this!!!! I'd be petrified to stay in the house after something like that. Alhumdulilah that you are all ok.

I spent the day yesterday at the ER. :wacko: Didn't get home until 3:30am. blech. Apparently my gallbladder is FULL of stones so I have to schedule surgery when they open up on Tuesday. I told my mom that I'm just appauled that this is elective surgery and that they didn't just keep me and get it over with already. She agrees with the hospital! I mean in my mind, elective surgery is like a face lift or a tummy tuck, not something that is due to internal organs suffering and causing a person pain and nausea!!!

Kelly I don't know how you last this long without having yours out. They sent me home with a script for percoset and something for the nauseau but I haven't been able to get to the pharmacy yet. I took a bath a little while ago and that totally wiped me out.

I have to give big props to my husband. He took the day off to be with me yesterday and totally took care of me. When we waited so long he was my advocate asking what the hold up was and constantly reminding the nurse of this that or the other thing. After they gave me the morphine I tried to sleep and whenever I would move he'd jump and make sure I was mummified with the blankets again. This morning I woke up around 1pm and he had fresh coffee and some toast ready for me and had cleaned the entire house. This is a man who normally doesn't wake until 2pm if he works the nightshift! :luv: Luckily the owner of his workplace was also at the ER so at least they know he wasn't just calling out to have fun! He said that is God working for him. I love my husband with all my heart and soul and don't know how I could get through this without him! :luv:

Off 2 run errands. Got some awesome buys at the consignment sale yesterday for the twins! Rainforest jumper and some cute outfits! All practically brand new! Love a bargain! I learned that those professional consignment mommies are a bit vicious when they want something! Yikes!

That sounds AMAZING!!! I wonder if I can eat something like that. I know I have to keep things ultra low fat but I wonder how bad olives and olive oil would be for me. I love hummus!!!

ayesha I am so sorry you had to go through this!!!! I'd be petrified to stay in the house after something like that. Alhumdulilah that you are all ok.

I spent the day yesterday at the ER. :wacko: Didn't get home until 3:30am. blech. Apparently my gallbladder is FULL of stones so I have to schedule surgery when they open up on Tuesday. The worst thing is that they stole my sense of comfort and safety. But I'm trying to work on that and trying not to be so edgey about anybody walking up or down the street. Everything happens for a reason and this whole ordeal brought EVERYONE in my family closer together so alhamdulillah about that.

I missed everyone I know from the forum and I welcome everyone new. :luv: May God bless you all. I have alot of catching up to do.

Ok, I'm on a roll w/ the hummus - I just made another one (yeah, it'll be my snacking & meals all week). This one is a black bean & chickpea hummus (also w/ no tahini). I altered it a bit to taste & consistency, but here's the original recipe (again: allrecipes.com):

INGREDIENTS

* 1 cup canned black beans, drained

* 1 cup canned garbanzo beans (chickpeas), drained

* 1 tablespoon olive oil (I also added another T of olive oil for consistency)

* 2 tablespoons fresh lemon juice (I didn't measure, but used the juice of 2 whole small lemons)

* 2 tablespoons plain nonfat yogurt (I added 2 more T of yogurt for a smoother consistency)

* 2 tablespoons water

* 1 clove garlic, roughly chopped

* 1 1/2 teaspoons curry powder (I used cumin instead of curry just b/c I thought it would be good - and it is!)

* salt and pepper to taste (added paprika here too)

DIRECTIONS

1. Place black beans, garbanzo beans, olive oil, lemon juice, yogurt, water, and garlic into the bowl of a blender. Season with curry powder, salt, and pepper. Cover and puree until smooth. Refrigerate until ready to serve.

This will be great for dipping veggies in! Also a nice spread for a sandwich.

GG - what's cooking for dinner? I think I'll make a squash & eggplant casserole, fresh steamed corn on the cob, and cole slaw. For dessert? Fresh raspberries (or maybe a baked apple). I wish I had company!!!

I say dinner.......

I spent the day shopping! First I went to the thrift store to get some clothes for my Ugly Betty Halloween costume. I found some great stuff that Betty would TOTALLY wear :devil: Then I went to NY&Co and got myself 4 cardigans (like I needed more). Finally I went to Target to buy a going away gift for my friend and I ended up spending $20 on dollar items for myself! :whistle:

2009-08-12 no biometrics yet.......called on 30 day mark to report no biometrics, a service inquiry has been made on the case.....

2009-08-27 I-131 (AP) approved

2009-09-15 Biometrics appointment

2009-09-15 EAD Card production ordered!

2009-09-23 EAD Card received

2009-10-06 GC approved/card production ordered

2009-10-13 GC received in the mail!
