KING RANCH CHICKEN

1 (10.75 ounce) can condensed cream of chicken soup

1 (10.75 ounce) can condensed cream of mushroom soup

2 cups chicken broth

1 (10 ounce) can diced tomatoes with green chile peppers (like Ro-tel)

1 (12 ounce) package corn tortillas

3 cups cooked, diced chicken breast meat

1 onion, chopped

8 ounces shredded Cheddar cheese

1 1/2 teaspoons chili powder

1 teaspoon garlic salt

Preheat oven to 350 degrees F (175 degrees C).

Combine the chicken soup, mushroom soup, broth and tomatoes with chiles. Set aside.

Lightly grease a shallow 3 quart casserole dish. Layer 1/2 the tortillas, 1/2 the chicken, 1/2 the onion, and 1/2 the cheese in the casserole dish. Pour 1/2 of the soup mixture over the layers. Repeat the layers of tortillas, chicken, onion; pour the remaining soup mixture over the top, then top with the remaining cheese. Sprinkle with chili powder and garlic salt and bake for 30 to 45 minutes.

This is the basic recipe I use although you can add other things like corn or olives, etc etc. tonite I am using only mushroom soup because I dont have the chicken soup and I am too lazy to go to the store (it might cut into my snacking time). Anyway this casserole is creamy and cheesy and slightly spicy and oh so delicious :)

Sara, thank you for giving me the idea to make my Chicken Enchiladas tonight, which reminds me alot of your casserole recipe. Plus, the recipe you wrote out sounds just like what I used to make, except I cook down the chicken blend and roll it in tortillas. I just wanted to give you a little idea :idea: as to what would give your recipe a kick but not make it hot - one or two teaspoons of cumin. It is such a small but worthwhile addition. I love it. Gives it a little more authentic Mexican flavor. Yummmmmmmmmmmmmy!!!!!

i was actually going to say that this dish reminds me of one of my gf's chicken enchilada dishes! I'll get the exact recipe later for you all, but its very similar to this. Cream of chicken, CREAM CHEESE, cheddar cheese, cooked chicken pieces, a few other things I forget, all rolled into tortillas, covered with green enchilada sauce and cheese, and baked. Its very rich, and very good even though it tastes nothing like real enchiladas!\

Man.....I'm getting hungry now, but can't eat solid foods! My teeth hurt from spacers put on yesterday (braces prep :unsure: ).....So I'm only doing soft foods till I can see my dentist in the morning (i'm in too much pain..can't wait a week)..

But I do plan on eating pumpkin ice cream when I get home...with magic shell :devil:

Man.....I'm getting hungry now, but can't eat solid foods! My teeth hurt from spacers put on yesterday (braces prep :unsure: ).....So I'm only doing soft foods till I can see my dentist in the morning (i'm in too much pain..can't wait a week)..

But I do plan on eating pumpkin ice cream when I get home...with magic shell :devil:

Ooooooooooh who makes that? I love pumpkin ice cream. Right now in my freezer I have eggnog and also a peppermint stick - they rock!!!!

Well, everyone knows you eat the ice cream and THEN work out, silly :bonk:

Actually, I've heard it's better to eat after you work out because your metabolism will be higher. :devil:

Nesting??? well I certainly starting nesting and not to be a downer but all the things I bought have collected dust.

I started to drink the alcohol I had purchased for our celebrating and the place has become a total mess!!!

AP is a freakin nightmare...please we need a miracle here so we can start our life.

I love fridays and because OUR PHILADELPHIA PHILLIES are in the PLAYOFFS again today, I get out a 4:30 instead of 5pm!!!!!!! whooooohooooooooooo and the weather is too delightful..

2-26-09 - Visa in hand!

3-11-09 - POE JFK - Got stuck there due to immigration taking too long. They didn't change his visa from CR1 to IR1, have to go to immigration here to fix it.

3-12-09 - Arrived in Portland!!

5-29-2010 - Zane was born ** Absolute best day of my life!

6-7-2010 - Ahmed went back to Egypt

8-23-11 - Filed for divorce

1-12-12 - Divorce final
