RFE for joint sponsor I-864, what to do?

Hi,

I received a RFE for my joint sponsor's I-864, this is what it says:

the joint sponsor on form I-864 must submit all supporting tax documents (W-2's, 1099s etc) submitted to IRS for the most recent tax year.

and

the joint sponsor must be a United States citizen.

When my mother-in-law (the joint sponsor) gave me her papers she gave her tax returns from the last three years, does this mean she needs to give only her W-2's for the RFE? (she doesn't know what a 1099 is, and is sure she doesn't have any) I dont know anything about taxes, but she was going to talk to the person who helps with her taxes to get the proper info. I was wondering, other than W-2's what would satisfy this RFE? And should I re-submit her tax returns?

For proof of her status is it okay to send in a copy of her birth certificate? or will it have to be an original? she only has one original so we were wondering if a color copy is okay?

Also, I've never received a Request for Evidence before so... do I just put all the requested info into an envelope with the original letter and mail it back? (to lee's summit) should I paper clip them together? put in a cover letter or a letter of any sort? Not sure how its done...

and... if there are several things wrong with my I-485 will they send separate RFE's? because I know I didn't do the medical part correct and I was certain this RFE was going to be about that.
