Questions about NOA2 to Interview

Hi, I got a letter today from NVC saying that within a week they'd send the packet my fiance' needs in order to fill out and do. About how long does it take for them to process this packet and when roughly do you think the interview will be? It's the London Consulate.

And will it be possible for her to reschedule her appointment at a later date, possibly a month or so? She's under the iron stranglehold of some very unforgiving South Asian parents that firmly believe in arranged marriages and me being the white devil they'd never live that down, but the problem is that she is going to be in a bind finishing her final year of school if she's kicked out of her home and has nowhere to really go. The fear here is that she's afraid of being sent off somewhere on a whim with her family some time in the next few months, and if they staple that visa into her passport and her family decides to whimsically travel out of England and her parents see it, she's going to be in a world of not-very-nice-things.
