Two things.

Since she is coming into the USA on a CR-1 she will get an I-551 stamp allowing international travel, so could go practically anywhere though a visa to other country may be needed, with the exception of Canada, Mexico, and the Caribbean.

If domestic, than perhaps Hawaii, my brother went on a cruse around the Island State, saved a lot on hotel and travel from island to island, the boat took care of that.

Just keep it simple and stay domestic until your spouse has a green card. Spend the extra time you would have spent on the extra paperwork with each other.

My suggestion is to take your spouse somewhere where the climate, scenery, and subculture are completely foreign to your spouse.

I think people brought up some good questions. Where are you from? What do you like to do?

Hawaii is usually a beautiful destination. Some islands are extremely developed if you want to be around other tourists (like Honolulu, Oahu) and others are relatively undeveloped with lots of outdoorsy activities, like Kauai.

Since your wife is from India, you may want to try someplace different, like snow.

Being from California, I'd also say there are some beautiful spots here like the Monterey Peninsula, San Francisco, Napa Valley (wine country). Yosemite is here, though it's not necessarily near any large cities. It's beautiful to visit, though. Southern California has San Diego and Los Angelas. Los Angelas isn't necessarily very scenic, but there are a lot of touristy stuff to be done down there.

Las Vegas can also be fun as a "wow" factor. Just the sheer amount of money that's put into making these hotels and shopping malls. Even if you don't gamble, you can always walk around, look at hotels, take in shows, etc.

Niagara falls both American side and Canadian side the fall colors in western NY is nice, and again the I-551 stamp in passport would allow a trip into Canada without a visa, so could even visit Toronto.
