Sure you can. Go with her to the office if you want, bring all the documentation required, and make sure her I-94 won't expire within 14 days and you'll hopefully be able to get her a SSN. Usually it takes about 10 days for her to be in the system. If she's not, they may have her fill in the required forms to send her one, or they may ask that she return in a week.

You have to get an EAD before SS card; however, I added my wife to our insurance right after we were married (inside the "change of circumstance" window) with name, DOB, and faxed marriage cert - and that was (6) months before she entered the country on K3.

I added her then because entering the country itself is not a change of circumstance, so I would have had to wait until the NEXT open enrollment period which would have left her without insurance coverage for a period of time between arrival in the States and next open enrollment period the following year.

Most insurance plans have a window, I think 30 days, after change of family circumstance like marriage, new baby, etc and you do not want to miss that window to enroll a new family member. They (the insurance plans) like to have a SS number but it is not required (it never is when you are adding a newborn). In our case, it was a full year after enrollment before the K3 was approved, EAD/AOS was filed, EAD approved, and we received the SS card and my wife was covered for that entire period of time.

did you use her maiden name or did you use your last name for her when you filled out the insurance form?

The part in red IS correct for a K3 entrant, but not for a K1.
