6 months is what the I-864 says you MAY submit along with a current letter of employment if you believe these will help you. I myself sent in 6 months because it was easy for me to get. Take a look at the checklist that comes along with the I-864.

I sent printouts from my payroll system.

Unless specifically requested the USCIS does NOT require originals

I have direct deposit and printed the pay stubs off the online system as we don't get a hard copy by mail. I printed off all the ones from Dec07 through to the last pay period in 2008 prior to my 864 being sent (Aug 15, 2008). I also included notarized letter from my employer.

When a pay stub shows YTD income, one is sufficient. None are required but I think they are a good idea.

I just sent in 6 paystubs, not 6 months..I think as long as you have your IRS transcripts you should be good.

What when you do not have 2007 income (but 2006 and 2005), but substantial 2008 YTD income? I guess that then the paystub and employer's letter become very important?

I didn't send any pay stubs...just got employment verification letter and sent that. You dont' have to send pay stubs...but it's up to you if you want to send it.
