My wife has a K3 visa here in the US which is good for 2 years (she's been here ~3 months). I have to travel to France in October for a week for my job and I want to take her with me. I know she will need a Schengen Visa to let her into France. But it it OK that she travels out of the US and back on her K3 visa? I know it says on VJ that with a K3 you can leave and re-enter the US for 2 years multiple times, but the guide for filing Adjustment of Status here on VJ also has an optional form " I-131, Application for Travel Document". We have filed her AOS but did not file this I-131. Do we need it to travel to France? If she can leave and re=enter the US for 2 years, why is there even an I-131 option with the AOS?

I-131 is mostly for K-1 visa which is a one time visa. K-3 visa is a multiple entry visa so you can safely travel to France and come back.

Right, K3 holders need no I-131. The K3 visa in the passport will get her back into the US.

(I'm going for the IR-1 and blowing off the K-3. Even if it takes an extra couple months, it's worth it to not have to deal with USCIS again)

Note:

Please fill out I-130, wait 6 months for approval, then 3 more months for an interview. (Unless of course we've bombed your country into the stone age, then you qualify for expedited processing.)
