i even make my own chicken broth for the Chicken Tortilla soup.. the canned broth just doesn't do it for me with that recipe....

Ummmmm.... I love Chicken Tortilla soup!!! Haven't had any good CT soup since I moved away from Texas! :(

:secret: Can you share the recipe?

Chicken Tortilla Soup

6 tablespoons vegetable oil

8 (6 inch) corn tortillas, coarsely chopped

6 cloves garlic, minced

1/2 cup chopped fresh cilantro

1 onion, chopped

1 (29 ounce) can diced tomatoes

2 tablespoons ground cumin

1 tablespoon chili powder

3 bay leaves

6 cups chicken broth

1 teaspoon salt

1/2 teaspoon ground cayenne pepper

5 boneless chicken breast halves, cooked

1. In a large stock pot heat oil. Add tortillas, garlic, cilantro and onion. Saute for 2 to 3 minutes.

2. Stir in tomatoes and bring to a boil. Add cumin, chili powder, bay leaves and chicken stock. Return to a boil, reduce heat to medium and add salt and cayenne. Simmer for 30 minutes remove bay leaves and stir in chicken. Heat through and serve.

This is the basic recipe that I found but I have made a few adjustments to it.

1. I make my own broth by throwing the raw chicken into about 7 cups of water and then adding a bunch of spices like salt, pepper, chili powder, cumin, basil, oregano, paprika, a bay leaf or two, poultry seasoning etc... and then I let that boil until the chicken is cooked through... Take out the chicken and cut it up to use in the soup and save the broth minus the bay leaves and add where it says in the recipe.

2. I only fry up about 2 of the tortillas.

3. I add about an 1/8 cup of rice and a can of drained corn. Next time I make it I am going to add a can of beans...

4. I serve this with some crunched up tortilla chips and grated cheese... mmm yum!!

Marilyn....I'm making this soup this week. Thanks for the recipe!

Thankfully we had left overs from an event we had today. I stocked up so now I don't have to cook when I go home. I'm so glad because I feel like #######. Colds suck @ss.
