Timeline

I am a graduate student so I don't have full-time employment. However, I made enough money this summer to qualify my fiancee (i.e. 125% of poverty level). Should I include my last paycheck and count that income on the form or just use $0 income and rely completely on my joint sponsor?

Put your income. You should be truthful in all of your paperwork. Also, once your fiance is here, you & your sponsor will have to fill out they I-864. Its good to have your true income reflected on your I-134 just incase something happens with your sponsor and he/she is not able to co-sponsor at that point.

You can attach evidence like copies of recent pay stubs, employer letter, and most consulates want photocopy of past years IRS return or transcripts.

If you made money, then count it. Write a letter explaining your student status and possibly back that up with enrollment forms or something. Tell your major and expected future earnings...anything that would make an interviewer realize that you can support a wife. Get the letter notarized. This was suggested to a mom posting as Thai Family by a Dept of State person because her son didn't file 2007 income tax because of student status. I believe he had a job offer and used that to show proof of earnings. Take all your pay stubs.

Timeline

Do you need to include tax returns/transcripts if you are working? It says in the instructions for the I-134 for self employed people only, yet I have seen people include them with pay stubs etc. I only ask as my partner wants to start slowly gathering info and as he is deployed it will take longer than normal.
