I am filling out an 1864 with $3000 in cash assets and proof that I make more than $75k per year. Should this be enough for proof of income or will I need more cash in my checking account?

Many people who meet the income side of the equation do not provide any asset information.

As PP said, no need to even show the assets with that sort of income- assumign of course that income is US based and/ or will continue when you move to the USA.

Yes I saw that in the I-864 today. My other question though is that I filed taxes in 2006 and 2007 but my foreign restaurant took losses in both those years and I filled out my taxes accordingly. My current income will still qualify the financial requirements, correct?

no, they made me have a co-sponsor. But we were approved. The interview was basically how long have you been together.
