Timeline

Ok, I went to the DMV at the end of June to get my driver's license. This lady said I needed the USCIS receipt notification of change of status and a certified marriage certificate. Well, I got the I-797C Notice of Action for I-485, I-765 and I-131 so I was wondering if that would be enough to go get it or whether I still need to receive the EAD Card and all the rest in order to take the test.

Also, would I be fine to drive with an international driver's license from Spain until everything else is taken care of?

If the lady from the DMV said you needed the USCIS receipt notice for change of status then that is the I-797C for the I-485 and since you do not list what state you reside in then we have no clue how to help you because you are right it differs by state.

From the CO Driving handbook (available from the CO DMV website):

NON-RESIDENT ALIENS: Foreign tourists, instructors, and business persons may drive any private (noncommercial) vehicle with their personal Driver's license.

Yep, my only concern is that I'm not a foreign tourist.

but you are a non-resident (alien) until you meet the CO residency requirement

RESIDENT: Per C.R.S. 42-1-102 (81), any person who owns or operates a business in Colorado or who has resided within the state continuously for 90 days or who has obtained gainful employment within this state, whichever shall occur first, is considered a Colorado resident. (See New Resident §3)
