My earning was:

2007 - 83K

2006 - 56K

2005 - 22K

Size of family - 3 (Me, wife and 3 year son). Will be a problem with I-864 at interview?

NO NOT A PROBLEM All 3 years were above 125% povertyline, and most recent year is what they are looking at.

22K is minimum, for family of three and it was lower 3 years ago.

No problem there! Download form I-864P for Year 2008 and check the 125% Poverty Level.

You can goggle the form's number.

When i submited I-864 i did not include Emplyment letter. I just included 2007 IRS tax transcript. They did aprove I-864 and did not send RFE. I think Employment letter is optional. Do i need to worry and give this employment letter to my wife at interview?

NO I-864 is considered valid at the time you sign it and USCIS accepts it. Employment letter and pay stubs are considered optional by the form.

Also the only thing required by the form is past years IRS return (2007), and they are only concerned with current income, 2005 does not matter.

Employment letter is an optional document to show your "current income" when your tax returns do not show sufficient income. Since your tax transcripts show income well above poverty guideline, you are fine.
