If you have one job when you fill out the G-325A upon first filing the I-129F, but you change jobs shortly before you receive your NOA2, do you need to submit a new G-325A when forwarding your info to your fiance abroad? Will it create problems if the embassy sees a different job on your Affidavit of Support than the one you listed on the G-325A?

No biggy! Happens a LOT. Just list the new job on the I-134 at the interview.

is that what you have to do if both the USC and the fiance(e) change their jobs! or do they just care about the USC!!

NO, You do not have to inform USCIS of this.

You list US Citizen's job on Affidavit of support (I-134) and later on I-864 used for AOS.

Foreign citizen's jobs will be listed on DS-230, etc used for visa.
