I have to agree, if you are going to eat meat, eat some of the tasty fatty kind, otherwise, what's the point?

And what is with vegetarians who need to pretend they're eating meat? Tofurkey, #######??

There is so much good vegetarian food out there. Jamaican rotis for example. Or Indian paneer. Or vegetable lasagna!

Here's something really simple - sliced zucchini topped with mozzarella. Bake in the oven until mozza is golden brown. Combines your need for increased vegetables and his love of cheese (which I assume if he ate a lot of pizza in his bachelor days).

Or try Greek Pizza -

Ingredients:

1 Pizza crust (12") (I substitute this for a pita for less carb intake)

1 tbsp Olive oil

1 small Red onion, thinly sliced

½ tsp Garlic, minced

2 cups Mozzarella, grated

2 medium Tomatoes, sliced

2 tsp Oregano, fresh, chopped

½ cup Spinach, cooked, chopped (squeeze dry)

¼ cup Black olives, sliced

1 cup Feta cheese, crumbled

Instructions:

Heat the olive oil in a skillet. Add the onion and garlic. Cook until just soft. Set aside.

Sprinkle the Mozzarella over the crust. Top with the sliced tomatoes. Sprinkle on the oregano. Spoon on the onion mix, spinach, and black olives. Sprinkle on the feta.

Bake at 425° for 15-20 minutes or until the cheese is melted.

Vegie lasagne or spaghetti. You can shred a bunch of veggies into a lasagne or spaghetti sauce. Good protein in beans and cheese, both of which can be added to either dish.

Also, do you eat tuna? Pasta and tuna works well, again with cheese if you like.

Look into indian foods if you like spicy. Dhals are excellent as are most of the veggie curries, very easy and cheap to cook too. One of my favs is black eyed bean and mushrooms. The other easy veggie curry is one with potatoes, cauliflower and carrots.

There are really quite a lot of things you can cook, but like all cooking, it takes a bit of planning.

Oh, forgot to mention he hates fish (growing up on the coast, the smells got to him). Tried Indian food a couple times, but it was a no-go with him =/

Someone mentioned tofu -- he squirmed at the mention of it. I don't think it's worth spending the money on it with that reaction. Throwing food out is really tough on the pocketbook right now.

Veggie lasagne... have a good recipe? No more spaghetti - I joked with him already that he could easily turn into a flying spaghetti monster:

Tried a veggie chili, but he didn't much care for it... too many beans, he said. =/

Squash - he had spaghetti squash at my parents and didn't like it. Haven't tried others yet, but I suspect it'd have to mixed... The mixing seems to get him to eat stuff better.

If he vegetarian too? If not, maybe let him eat meat?

Not trying to pretend I eat meat. It just provides a few more options in the kitchen, especially when you're with a meat-eater. He has chicken parmesan, I have fake chicken parmesan. He has a hamburger, I have a veggie burger. Get it? :P

Need more veggies in my man, though! And ideas for dishes we can both eat are running short.

i've had tofu a million different ways, it sucks every time. my wife even tried lying to me and telling me it was something else. i knew it was tofu the moment it was in my mouth and i wanted to puke and scream at the same time.

turkey breast without the skin is the best meat for you. it has the least amount of fat and no saturated fat.

it's also tasteless and gross.

you people must not know how to layer flavors very well! I love turkey breast and eat it for most meals. it's very tasty and yum if you cook it right.

Not trying to pretend I eat meat. It just provides a few more options in the kitchen, especially when you're with a meat-eater. He has chicken parmesan, I have fake chicken parmesan. He has a hamburger, I have a veggie burger. Get it? :P

I would try making a typical lasagna but add some egg white to the ricotta or cottage cheese for some extra protein as well as some herbs. Then, add in some chopped tomato and onion to the sauce you normally use. Finally, layer it as normal and add in a layer of zucchini. You don't really taste it, it makes the lasagna less dry & it adds some veggies.

Also, you might want to try juicing or pulping. Adding these things to dishes is easy once you have stuff in the freezer and he won't ever know they're in it unless you tell him :P

My husband is insistant that he hates mushrooms but he eats them quite often without knowing it ;)

I eat grilled turkey breast in salads quite often and I only put some salt & pepper on it.

If I'm eating for dinner I eat other things with it. And no the "flavor" isn't from the meat. That's why I said you need to learn to layer flavors better and then you won't even know if the meat is flavorless.
