Ideas for a picky eater

Okay, here's the deal. My SO is trying to get over his bachelor diet of spaghetti, pizza, and frozen chicken/potatoes. He needs to eat more veggies, but he's soooooo picky. I'm on a tight budget, too. And I don't want to spend ages in the kitchen cooking. Oh, and I'm vegetarian, so anything with meat has to be substitutable with fake meat products (there's fake chicken, fake beef strips, and fake ground beef that come to mind). I'm not having much luck with him with beans unless they're mixed with something else.

HELP!!!!!!

I need some fresh ideas on what to cook. I know it's a tall order... some casseroles or something? I'm not much of a cook, so I really need ideas/help!!!!!! :help:

Not sure what type of food you like (spicy, etc) but here is a recipe that I have with tofu... Tofu is really good, it absorbs the flavor of whatever it is in, and is high in protein. I add jalapenos to this recipe for some kick...

Ingredients

1 small onion, diced

3-4 garlic cloves, minced

1 tablespoon olive oil

1 (14 1/2 ounce) can diced tomatoes

1 teaspoon basil

1 teaspoon oregano

8 ounces soft tofu, drained

2 cups cooked brown rice

10 ounces frozen spinach, thawed & drained

1/2 cup shredded swiss cheese

salt & pepper

sesame seed

Directions

In large saucepan, cook onion & garlic till tender in oil-do not brown. Add UNDRAINED tomatoes & oregano & basil. Bring to a boil; reduce heat. Simmer, uncovered about 3 minute.

Meanwhile, place tofu in food processor or blender-process until smooth. Add to tomato mixture. Stir in cooked rice, spinach, HALF of swiss, salt & pepper.

Lightly grease (olive oil works well) an 8x8-inch or 9x9-inch casserole. Spoon in mixture & top w/ remaining cheese & a Tbsp or 2 of sesame seeds.

Bake, uncovered at 350°F for 30-40 minute.

How about chili? I imagine the fake ground beef would work nicely, or you could just do a vegetable chili with beans and a variety of veggies (if you can find ones he will eat). Sometimes hiding veggies in chili can trick a non vegetable eater :) I make my variation of chili (really it is a recipe for taco soup). I take 1 pound of browned ground beef (you can substitute the meatless kind), 1 can on black beans, 1 can of kidney beans, 1 can of pinto beans, 1 can of corn, 1 can of regular diced tomatoes, 1 can of diced tomatoes with green chilis, 1 packet ranch dressing seasoning (sounds weird but it is good) and 1 packet of taco seasoning, mix it up and simmer for awhile. The recipe really calls for 2 packets each of the seasoning mixes, but I think it makes it too salty and it tastes fine to me with just one each.

i've had tofu a million different ways, it sucks every time. my wife even tried lying to me and telling me it was something else. i knew it was tofu the moment it was in my mouth and i wanted to puke and scream at the same time.

Vegie lasagne or spaghetti. You can shred a bunch of veggies into a lasagne or spaghetti sauce. Good protein in beans and cheese, both of which can be added to either dish.

Also, do you eat tuna? Pasta and tuna works well, again with cheese if you like.

Look into indian foods if you like spicy. Dhals are excellent as are most of the veggie curries, very easy and cheap to cook too. One of my favs is black eyed bean and mushrooms. The other easy veggie curry is one with potatoes, cauliflower and carrots.

There are really quite a lot of things you can cook, but like all cooking, it takes a bit of planning.

i've had tofu a million different ways, it sucks every time. my wife even tried lying to me and telling me it was something else. i knew it was tofu the moment it was in my mouth and i wanted to puke and scream at the same time.

Tofu is not one of my faves, but we don't eat pork. I get sooo tired of chicken and turkey.

turkey breast without the skin is the best meat for you. it has the least amount of fat and no saturated fat.

it's also tasteless and gross.

I have to agree, if you are going to eat meat, eat some of the tasty fatty kind, otherwise, what's the point?
