This is my Mom's recipe, a vegan version

Potato Soup

2 tablespoons olive oil

5 potaotes

1 sliced carrot

1/4 chopped celeric

1/2 chopped leek

fresh parsely

salt and pepper

vegetable broth (Mom just uses a cube)

Chop celeric, carrots and leek and fry in olive oil for a few minutes, then add the chopped potatoes followed by the vegetable broth. and salt and pepper. Boil until potatoes are soft, then put 2/3 of it into a blender and blend until smooth. Put it back into the pot and add chopped fresh parsely. Et voilà!

Do you have any good potato soup recipes? I feel like having potato soup for dinner. Maybe I'll try something like baked potato soup. Something creamy.

my gma makes a yummy potato soup...

2lb potatoes

1 carrot

1 piece of celery

1 onion (minced)

6T butter or margarine

6-8T flour

2c milk

shredded cheese (optional)

peel & chop potatoes & put into stock pot (big pan)

finely chop carrots & celery and put into stock pot with potatoes

boil until potatoes are done

strain but reserve cooking liquid for later use

saute onion in butter or margarine until desired doneness

add flour to onion/butter to create a roux

cook for a few minutes stirring constantly to get rid of floury taste

add in milk and stir to thicken & get rid of any lumps

add back in potatoes/onion/celery

continue to add the cooking liquid until desired thickness

also you can add in shredded cheese at this point if you'd like

Also, I just got back from the dr and he told me I have a sinus infection and to take mucinex d, use saline spray, and take allergy medication. he said he would write me a prescription if I'm still sick next week. apparently he knows too many people and he has people calling him at home, on his cell phone, etc to get prescriptions and he's so nice he just calls them in. he's trying not to do it anymore. my mom said she read about them doing a study on taking the mucinex d & saline spray. apparently it works just as well as antibiotics.

eta: and I'm watching Little Women on tv. I haven't seen this movie for a long long time. I thought I liked it but now I don't know.
