My wife entered the US with a B1/B2 Tourist visa. We have since filed for AOS. Do we need to renew/extend her I-94 whilst they are processing her AOS?

No need to extend I-94, your wife is legally in the US, her status changed from Visitor to "pending adjustment of status". The NOA's are proof of that.

But she needs to be careful, any time she may be asked by authorities make sure she caries NOA 1 and marriage certificate and even then an Ice agent or police officer won't always know this is acceptable. They may detain and then contact USCIS for verification. I actually called ICE and asked them this question and they told me this. Even domestic air travel can cause this situation because TSA now checks ID and verifies legal status if in question.

I've been here for 2 years (came on a B2 then applied for AOS) and I never got checked by ICE or something or the sort. The only place that wanted to make sure I was here legally was the Social Security and they required my EAD to change my name. Besides that nothing.

You do not need to renew your B2 because you are pending on a new status. It's an inbetween status but one non the less.
