Name for AOS paperwork: maiden or married?

Hello, all,

I got married to my fiancee last week and we're trying to put stuff together for AOS. We are quite confused about the name as she is taking my last name.

What names do we use for I-485, I-864EZ, I-131, EAD application etc? Her maiden name as it appears on her passport and all the previous immigration paperwork or the new name (her first name plus my last name)?

Today she went to Social Security to change the name on her card (she's been to the US before and has a SSN already). They told her that because she isn't in their computer it may take up to 4 weeks to get a card with her new name. So until then there is not a single document with her first name plus my last name as her full name. The only thing that there is, is our marriage certificate.

Can we even apply for AOS until the Social Security takes care of the name change? I mean if she just writes her new name without any US document to show that that's her name, isn't it like she's making her name up arbitrarily? Besides, if we want to apply for Employment authorization, is that possible without a SSN that matches her new name?

I'm sure most of you had to deal with this. Your input would be appreciated.

Thank you!
