Iced tea scare a tempest in a teapot

June just happens to be National Iced Tea Month. It signals the time when people everywhere begin enjoying the summer cooler anew. Earlier this year, however, some restaurants stopped serving fresh-brewed iced tea, after local television reporters warned that dangerous microbes might be swimming in the brew served in restaurants.

The truth is, there may be microbes, but they probably are of the relatively harmless variety that naturally cling to tea leaves. The confusion resulted from tests that look for fecal coliforms. One such coliform, E. coli, is common in the feces of animals and humans, and thus is a good indicator of fecal contamination--a potentially serious health problem. The usually harmless coliform bacteria Klebsiella and Engterobacter however, are common to soil, water and plants, including the tea plant. These bacteria tested positive in nonspecific coliform tests and the results were misinterpreted as fecal coliform contamination.

The large numbers of relatively benign bacteria that showed up probably occurred because of lax sanitation of restaurant tea dispensers. The spigot is particularly susceptible to harboring organisms if not removed and cleaned daily. But iced tea is no more susceptible to contamination than any other food.

The Centers for Disease Control and Prevention (CDC), which investigated the reports about iced tea, explained that theoretically tea could transmit disease if other bacteria survived the brewing -- a possibility with some organisms--and if they were allowed to grow in unrefrigerated tea. But, the fact is the CDC has encountered only one case in which iced tea was even suspected as the source of disease, and it has never positively traced a case of illness to iced tea.

CDC advises that to reduce even a theoretical risk, it's best to make iced tea with boiling water and keep it refrigerated. "Sun tea"--made by leaving tea in the sun to brew--may not reach a high enough temperature to prevent bacterial growth, and is no longer promoted by the tea industry. If you use a container with a spigot at home to dispense your iced tea--or any beverage--be sure it can be disassembled, and clean it regularly.

I'll never quite understand why some people are so afraid of Bacteria. While there are a few bad ones out there, our bodies are home to billions of bacteria. Many of them necessary for our bodies to function.

The inclination to sanitize everything, deprives us opportunities to develop stronger immune systems. Yes we might get sick, but we will likely end up healthier because of it.

I boil my tea, then sweeten it, and stick it in the fridge til cold :) i know it was usless info but i wanted to share it LOL

Mmmmm...drinking some right now :) I hate that you can't get real tea in Seattle. May be one of the only things I don't like about this place :)
