I need to go to Italy in 20 days because my mother doesn't feel good and needs me.

I got my temporary green card approved (althought I haven't received it yet) at the AOS interview.

I have the I-512L, Authorization for Parole of an Alien Into the United States that I got after applying for AOS.

Is there something else that I need to have before traveling to Italy, and how long can I stay outside of the USA (I plan to stay by my mother for a month)?

You cannot leave with your AP if your greencard has been approved. You may wish to make an infopass appointment to see if you can obtain the stamp. Or simply wait for the greencard to arrive in the mail.

Yes, the green card usually arrives in a week or two after approval but you can go to the local USCIS office with your airline ticket indicating imminent travel plans and they'll give you a temporary stamp that works as well as a green card. Staying a month or two will be no problem at all.
