Changing spouse's last name after marriage?

Hi everybody ! First of all, I just want to say that this site is absolutely THE BEST and VERY HELPFUL. Thanks all VJ members for your support and assistance.

My wife has been scheduled for her CR1 interview this July in India. Since she got her passport before we got married, I filed all the paperwork with USCIS and NVC in her maiden name and to avoid any problems, we have NOT changed her last name after marriage.

When and how should we proceed with her name change? Will they allow it during the interview or at the POE so that the Permanent Resident card (CR1) arrives with the new name? If we wait, then I think there's a steep fee to pay USCIS along with paperwork, which I want to avoid having to deal with all that waiting and tension again. Does anybody have any experience with this?
