When we file the AOS are they going to be looking at current annual income or are they going to be looking at the tax form from last year. Everything I have read, it is the current income that matters. Supplying the copies of past tax returns is optional.

If its the current income that matters what proof do we submit to them? And why ask for past tax info?

If you read the directions carefully, the past 2-3 years of tax records are totally optional. It´s for people like me who usually make more money, but didn´t this year since I took time off to live with my husband in Peru.

Your question was already answered above. They want your current earnings as of THIS year. You can provide the other tax returns optionally. It doesn't matter that you made less than enough last year, if you're making enough this year.

Form I-864/AOS is asking what is the current income of the petitioner, its means if you are payed salary just put the whole amount of the year or if you are hourly, what I did is I multiply hourly rate with hours and weeks in year, ($XX x 40 x 52 weeks= $XX,XXX.xx), I also sent a letter from my job stating how much I am making and position, I sent three most recent paystubs and taxes(2006 cause 2007 were not filed at that time). All went well at NVC they did accept it with 2006, my 2007 were below the PG`s and that was my biggest concern for the interview, luckilly CO didnt ask for my 2007 taxes at all.

Yes, you would have current pay stubs and a letter from your employer saying how much you make.
