Ice cream or ice-cream (originally iced cream) is a frozen dessert made from dairy products, such as milk and cream, combined with flavorings and sweeteners, such as sugar, and possible other ingredients. This mixture is stirred slowly while cooling to prevent large ice crystals from forming; the result is a smoothly textured ice cream. In the United States, ice cream made with just cream, sugar, and a flavoring (usually fruit) is sometimes referred to as "Philadelphia style" ice cream. Ice creams made with eggs, usually in the form of custards, are "French" ice creams.

Is this in reference to me saying real ice cream is made with eggs?

If so, that's my opinion. It's not worth eating and consuming calories if it isn't the best!

American ice cream made with milk and tons of air churned into is lame!

Hand Churned Ice cream is not bad.. that's your opinion only...

there's nothing better than country hand churned peach ice cream.. I'll take that any day over fancy gelatto or french ice cream

Federal standards require ice cream to contain a minimum of 10% milk fat (about 7 grams (g) of fat per 1/2 cup serving) and 20% total milk solids by weight.

I think we should put a panel together to interpret that statement.

It means you can't churn loads of air into it. It can't be called ice cream if it has too much air in it. It has to be that much milk fat/solids and the rest can be air. That's why when ice cream melts a whole bowl turns into almost nothing.

All you need to know is the reason why when a bowl of ice cream melts it's nowhere near as much as when it was frozen is because it had loads of air in it :P

eta: The ice creams that are more expensive have less air in them so you're paying for more real ingredients and not air :P
