One of the best ideas, In fact, I've done exactly just what mentioned above. Kudus! Why would you want your spouse to carry 25 pounds of evidence? That is like working out. If I were to make my wife carry 25 pounds in the environment and atmospheric tropical weather condition of Vietnam, I think she would faint. If you haven't been to Vietnam, than you wouldn't know that it get's from 90 F degrees + PLUS, on an daily average basis. It can get up to over 100 F degrees. And you would feel like never leaving the house and turning the AC on 24/7. THROUGHOUT THE WHOLE YEAR. And when it Rains, then it's not really COLD, but warm. Exception for in the winter nights the weather condition can be really nice.

I know you've worked hard on it, but 25 pounds seems like an awful lot.

I sent my husband with a big looseleaf binder with these clear slash folders, so he could see it all clearly and had easy access to pull them out and give the interviewer whatever he needed. For things like birth certificates, etc., I put the original with a copy right behind it so it was easy to show the original then give the copy for the interviewer to keep.

Don't overdo it. The consular officer might get suspicious that you're trying to cover up something when bringing so much stuff along.

Bring the amount of papers down so that you're fiance can comfortably carry them to the consulate.
