I called the passport office about the same thing last week we are just about to file for K1 status, so fingers crossed I will be there the begining of next year and therefore my passport will run out whilst in the States. They said to apply at the consulate and they will issue a new one, however you must advise them not to cancel the K1 visa in the passport that has expired and you will have to travel when allowed with the new passport and the expired one with the K1 visa in it.

K1 is a one time use visa. It is invalid upon using it to enter the US.

Foreigners certainly can renew their passports with their country's Consulate in the USA but that's not always easy, so it's best to think through whether to do it before or after US entry. For instance, the nearest Chinese Consulate to us in 900 miles away, it takes four days and they won't renew a passport by mail anymore. My wife's passport was less than a year old when she arrived, so we'll just have to do the best we can when the 5 years validity is up. In all likelyhood we'll renew it during one of our trips to China.

Can it be easily renewed within a week there in China?

The four days is at the Chinese Consulate in San Francisco. It would take longer in China but that's not a problem. We don't have any reason to spend four days in a US city with a Chinese Consulate.
